Mexican Jumping Beans

How challenging is it to make this recipe? Well, it depends on whether or not you know how to open a can! If you do, you can master these delicious beans with very little effort.

Mexican Jumping Beans


  • 1 or 2 onions, diced
  • Chicken or beef – see note below.
  • 2 cans mild Ro-Tel tomatoes diced with green chilies
  • 1 envelope Hidden Valley Ranch dry dressing mix
  • 1 envelope mild taco seasoning mix
  • 1 can seasoned diced tomatoes
  • 1 can black beans
  • 1 can pinto beans
  • 1 can kidney beans
  • 1 can cannellini beans
  • 1 can corn kernels
  • Optional – tortilla chips, tortillas, sour cream, chopped scallions, grated cheese, rice.

NOTE: You can use 3 to 4 raw chicken breasts (increases cooking time by a few hours), 2 cans cooked chicken breast, 2 -3 cups cooked chicken, shredded or cooked ground beef. Makes a good vegetarian dish without the chicken or beef. You can also increase the number of cans of beans and/or tomatoes in other flavor varieties to increase servings.


Put everything in crockpot in order listed. Stir only once or twice to combine. Cook in crockpot on low setting till raw chicken is cooked about 5 to 6 hours or with cooked meat, about 2 to 3 hours or until heated through.

Serve: Put crushed tortilla chips or rice in bottom of bowl. Ladle bean mixture over. Top with your choice of sour cream, scallions, cheese, etc. Warm tortillas as a side are a good choice as well.
